During it, he headed the kitchens of the now NH Collection Col\u00f3n, the renowned Belagua restaurant in the now Santa Mauro hotel and the kitchen of NH Ventas. From that last destination, he began his current career as executive chef at NH Collection Madrid Abascal, with one of the chain\u2019s most renowned selections, leading various gastronomic innovation projects within the Collection brand.<\/p>\n<p>His cuisine brings together diverse influences, from the Spanish plateau and especially from his homeland, Soria, as well as his constant collaborations at pop-up restaurants with Roberto Ruiz (Punto MX), Byron Hogan (current chef at the United States Embassy) and, of course, his NH family colleagues, Bartolom\u00e9 (NH Collection Eurobuilding) and
