Ángel Aylaga, executive chef at NH Collection Madrid Abascal for over fifteen years, is a creative professional with proven experience in the international chain who, together with chef Paco Roncero, has designed the dynamic menu at DOMO Abascal.

From Soria, he started his career at different restaurants in the Basque Country and Castilla y León, until arriving in Madrid and starting his adventure at NH Hotels, which he continues up until today. During it, he headed the kitchens of the now NH Collection Colón, the renowned Belagua restaurant in the now Santa Mauro hotel and the kitchen of NH Ventas. From that last destination, he began his current career as executive chef at NH Collection Madrid Abascal, with one of the chain’s most renowned selections, leading various gastronomic innovation projects within the Collection brand.

His cuisine brings together diverse influences, from the Spanish plateau and especially from his homeland, Soria, as well as his constant collaborations at pop-up restaurants with Roberto Ruiz (Punto MX), Byron Hogan (current chef at the United States Embassy) and, of course, his NH family colleagues, Bartolomé (NH Collection Eurobuilding) and Paco Roncero (La Terraza del Casino).
