DOMO, located in NH Collection Abascal, brings together a unique concept and one-of-a-kind space under the guidance of chef Ángel Aylagas and the elegant dining room management of its head Maître, Nuria Martín.

NH Collection Abascal allows the best local cuisine to be enjoyed and boasts the unquestionable hallmark of its chef. All of this allows for a fantastic world-class dining experience to be enjoyed, in every respect.

In addition to its tempting menu, from Monday to Thursday the hotel offers an executive menu where a selection of its great dishes can be enjoyed. It also has its revamped The Box by Roncero & Aylagas, which includes different miniature versions of avant-garde cuisine culinary selections.

The offer is completed with the hotel terrace where you can try its tapas accompanied by a selection of wines and drinks. Also at night, it is a place where you can try cocktails created by the bartender Diego Cabrera, among which include his personal version of the Manhattan to his latest and most radical creations, like the Chiara, the Guaracha #2 or the Sabor Mediterráneo (Mediterranean Flavour).

Contemporary cuisine

An avant-garde cuisine that incorporates big tastes and a combination of the best ingredients prepared by its chef Ángel Aylagas.

Traditional dishes that are added to the menu with a twist, like the tomato salmorejo with scallop and shrimp ceviche. Or where dishes of diverse cultural influences are included, like the tiradito de bacalao (dish of raw cod) with a Bilbao-style jalapeño and soy mayonnaise sauce or its caramelised foie with a spice bread and nut crust.

On the restaurant’s menu, centred on the product and with an outstanding rotation, natural ingredients prevail. Seemingly simple dishes that allow you to savour top quality meat and fish, as well as fresh vegetables that are always seasonal.

Never forgetting the world of wine, which Nuria Martín carefully works on with dynamic lists, keeping up with the selections from the best wineries, no matter their location or size. Quality is the basic principle. Aware of it, Nuria pairs the tastes that Ángel creates with the best local and international wines.

Diego Cabrera’s cocktail bar

The hotel boasts Diego Cabrera’s Bar, where you can taste his cocktails. Also, in the evenings you can enjoy them on its terrace that becomes a modern and sophisticated social club where, in addition to having dinner or a bite to eat until the wee hours, you can try cocktails from the menu designed by the renowned mixologist Diego Cabrera.

Very creative cocktails but also classics, with a wide variety of gins, vodkas, whiskeys, beers and champagnes. A selection with all of the latest to satisfy all tastes.
